Grape Variety: Barbera Fermentation: Grapes are picked up in cassettes and pressed on same day. The selected yeasts are immediately added to start fermentation. This lasts 20/25 days with frequent and long pumping over to extract all the substances needed for aging. After the malolactic fermentation, the wine rests in 25HL oak wood barrels for 14-18 months. Recommended food accompaniments: Cheeses and red meats. Pairs also well with game. Best consumption period: This wine can last up to 36/48 months. Serving temperature: 18 °C. Appearance: Intense Ruby Red Aroma: Fruity, warm with light boisè scents typical of Barbera grapes. Taste: Full and round, harmonic. Excellent persistency
