In the vineyards of the Rovereto hills, a small peasant village, the farm is located. Our family has been working in the world of viticulture for many years. However the " I MONCALVI " brand was born only in 1998.
Our vineyards, aged between 0 - 60 years, have a varied and changeable type of soil and the growth of the vines in helped by an ideal microclimate. A wise and "ecological" processing from the vineyards to the cellar contributes to this.
The "perfect habitat" needs a non-aggressive pruning to obtain low yield and better quality. A principle that will be present in all the vegetative phases of the vine.
Our philosophy of thought is based on two rules: respect for nature and low impact.
The harvest is the most important moment of the year. In cellar we follow a few, but ambitious quality rules: soft pressing, reduction to a minimum of sulphitation, control of the temperature in fermentation. Thanks to experience and little secrets that many years of work have taught us, we essentially want quality products through the use of still traditional methods applied to advanced technology.
